The Vegetarian Recipes That Fit Into Every Busy Schedule

In 2007, I wrote Super Natural Cooking. It was a cookbook celebrating the power of natural foods at a time when cooking with whole grains and focusing on nutrient-dense plant-based ingredients wasn’t as popular. Super Natural Cooking and its 2011 follow-up, Super Natural Every Day, highlighted a style of cooking and sourcing of ingredients that felt right to me. It made sense to eat real food and cook using mindfully grown, thoughtfully sourced ingredients. The case for vegetarianism (and veganism) was similar then to what it is now: better for the planet, better for the animals, better for

Food Tax Holiday Trending Toward Failure

A plan to use money from Tennessee’s rainy-day fund to eliminate the state’s food tax for six months is limping ahead, its prospects for passage unlikely.

Earlier this month, the House version of the Democratic legislation was placed “behind the budget,” a designation for legislation typically doomed to fail because it is not included in the General Assembly’s annual spending plan. The multimillion-dollar plan could still be included in a later supplemental budget.

In the Senate, a finance subcommittee on Tuesday moved the legislation along with a nonbinding though ominous negative recommendation.

Under the plan, Tennessee’s 4 percent tax on

54.4 million Americans don’t have access to healthy food. That’s a des

Even in the richest parts of urban America there are pockets of deep food insecurity, and more often than not it is Black and Latino communities that are hit hardest.

As an urban planning academic who teaches a course on food justice, I’m aware that this disparity is in large part through design. For over a century, urban planning has been used as a toolkit for maintaining white supremacy that has divided U.S. cities along racial lines. And this has contributed to the development of so-called “food deserts“—areas of limited access to reasonably priced, healthy,
